Zucchini Cakes (not like a sweet loaf)

<p>This is my all.time.favorite.summer.recipe. Great with sour cream or goat cheese on top. I usually dont measure anything and sometimes have less parmesan or less breadcrumbs than needed but it always turns out great!</p>

Ingredients
4 cup grated zucchini
1 Tbsp sea salt
4 eggs
1 sm onion, finely chopped
2 cups whole grain bread crumbs
1/4 tsp cayenne pepper
1/2 cup parmesan cheese
~4 Tbsp Butter
~4 Tbsp extra virgin olive oil

Step by Step Instructions
  1. Mix Zucchini with salt and let stand 1/2 hr. Rinse well and squeeze dry in a towel
  2. Mix with eggs, bread crumbs, cheese, and cayenne pepper, and season to taste. Form into cakes and saute a few at a time in butter and olive oil.
