Buffalo Con Queso Dip
From Suwanee Whole Life Co-op

My mother-in-law, Gail Carrell, used to make this delicious dip for her bridge club meetings. We replaced the beef with buffalo and gave it a new name. It is popular at our farm events. Kids love it!
Source: Gail Carrell (Entered by Shalley & David Carrell)
1 lb water buffalo premium ground
1/2 cup onion, chopped
1 clove garlic, minced
8 oz tomato sauce
8 oz cream cheese, softened
1/3 cup parmesan cheese
1/4 cup ketchup
3/4 tsp oregano, dried or fresh
4 T fat for cooking (butter, olive, coconut, etc.)
1 bag tortilla chips
Step by Step Instructions
- Heat the cooking fat over medium heat. Saute the onion and garlic until just soft.
- Add the water buffalo premium ground. Cook until browned, using a wooden spatula to break apart. No need to drain (any fat in the pan is good fat.)
- Add remaining ingredients. Stir until smooth and warmed through. Keep warm in a crock pot if desired. Serve with tortilla chips.
