Butternut Squash Chips

Ingredients
1 Butternut squash
1 tablespoon Olive or avocado oil
Sea
1 sprig Fresh rosemary
And/or thyme
cayenne pepper (to taste, optional)
And/or paprika (to taste, optional)
Dip for serving (optional)

Step by Step Instructions
  1. Preheat oven to 375 degrees, and prepare a baking sheet with parchment paper.
  2. Remove the top of the butternut squash and cut the neck into thin slices with a mandolin slicer (note: you can remove the skin prior to this step, but it is not required that you do so). Rub the slices with the oil.
  3. Lay the slices out on the baking sheet in a single layer and not overlapping. Sprinkle with salt, herbs, and any other additional spices you desire. Bake for 20 to 25 minutes, serve with dip if desired.
