Grilled Shrimp & Satsuma Salad

Ingredients
2 15 ounce cans Black beans (rinsed & drained)
6 Satsumas (peeled and separated into segments)
1/2 of a Bell pepper (preferably yellow) (Seeded & sliced)
1/2 of a small Onion (preferably red) (thinly sliced)
4 cups Arugula
OR other lettuce
1 pound Shrimp (peeled and grilled/broiled)
Fresh cilantro (for garnish)
2 tablespoons Satsuma juice
1 teaspoon Chili powder
1/2 teaspoon Ground cumin
1/2 teaspoon Sugar
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/4 cup Olive oil
1/4 cup Fresh cilantro (chopped)

Step by Step Instructions
  1. Whisk the satsuma juice, chili powder, cumin, sugar, salt, black pepper, olive oil, and cilantro together.
  2. Toss the black beans, bell pepper, and onion with the satsuma dressing.
  3. Divide the salad greens between 4 plates, then spoon the bean mixture atop each. Top each with shrimp, then garnish with cilantro.
