Cocoa Spiced Salmon

Ingredients
1/2 cup Orange juice
4 Salmon filets
1 tablespoon Brown sugar
2 teaspoons Sugar
1 teaspoon Baking cocoa
1/4 teaspoon Cayenne pepper
1/4 teaspoon Ground cinnamon
1/8 teaspoon Salt
1/8 teaspoon Pepper
4 tablespoons Butter (melted)
1 medium sized Navel orange (thinly sliced)

Step by Step Instructions
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Pour the orange juice into a shallow dish and let the salmon stand in it at room temperature for 15 minutes (skin side up!)
  2. Stir the brown sugar, sugar, cocoa powder, cayenne, cinnamon, salt and pepper together in a small bowl.
  3. Place the salmon skin side down on the baking sheet and rub it with the spice mixture. Place the orange slices onto the salmon and brush it with melted butter.
  4. Bake the salmon for 20 to 25 minutes, then serve.
