Roasted Cabbage Wedges

Ingredients
1 large Head of cabbage
4 tablespoons Avocado oil (divided) (plus a bit more for the baking sheet)
1 clove Garlic (minced) (divided)
1 teaspoon Salt (divided)
1/4 teaspoon Black pepper
1 cup Fresh parsley (chopped)
Juice & zest from 1 lemon
1/4 teaspoon Red pepper flakes
1/4 teaspoon Smoked paprika

Step by Step Instructions
  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper and drizzle a little avocado oil over the parchment paper. Peel off the outer leaves of the cabbage and cut it into wedges.
  2. Soak the cabbage wedges in a bowl of water for 3 to 5 minutes, then pat them dry and discard the water.
  3. Stir 2 teaspoons of minced garlic, 2 tbsp avocado oil, 1/2 tsp salt and black pepper together in a small bowl, then drizzle or brush this mixture over the cabbage wedges. Roast the wedges on the baking sheet for 25 to 30 minutes
  4. While the cabbage roasts, stir the lemon zest, lemon juice, remaining oil, salt, and garlic, and the red pepper flakes and paprika together. Stir in the fresh parsley, then cover the mixture and set it aside.
  5. Serve the roasted cabbage wedges drizzled with the parsley sauce.
