Located in Butler, Georgia, Sam’s cows enjoy grazing on 1200 acres of this Certified Organic Farm and we are fortunate that he is willing to transport this fresh, creamy milk to us. Working together, we need to ensure that we meet a minimum order for each Market so it remains economically viable for deliveries to continue! On Wednesdays: Here’s a map.

Market News

The Market is back open and our vacationing producers have returned and the pick-up schedule returns to normal. Casa Segovia-Paz, Carol’s Vibration Cooking and Erdmann Farm are back with their products this week.

Some new and returning products have been listed. The Blue Porch introduces watermelon salsa. Flying S Farms brings to us blue and red potatoes along with all their varieties of squash. Blackberries are back this week from Rainbow Hill Farm. Erdmann Farm is bringing several varieties of cut flowers to the Market, including a bouquet with zinnias and hydrangeas.

Chef Jenny with JENuine Health introduces another seed snack this week. From Jenny:

Cuckoo Cocoa Banana brings the flavors of childhood cereals (like Coco Puffs) into a nutritious mix that is not loaded with sugar. Toasted sunflower seeds, pumpkin seeds, and banana chips are combined with agave, cocoa, and spices for a mix you can enjoy anytime of the day. Try it with: Banana Pudding, Granola, or Trail Mixes.

There are plenty of other products available this week. Browse the categories to see what your will find.

Thanks so much for your support of Stones River Market, all of our growers, local food, and our rights to eat it. We’ll see you on Wednesday at Southern Stained Glass at 310 West Main Street from 5:00 to 6: 30 pm!

Recipes

Please, share your recipes with us on the Recipes tab. We’d all love to know how you use your Stones River Market products, so we can try it too! I am taking a break from recipes this week. If you have created a dish and want to share with everyone, please send it to me.

I am taking break from recipes this week. They will return next week.

I thank you for your interest and support of our efforts to bring you the healthiest, the freshest and the most delicious locally-produced foods possible!

ALFN Local Food Club:  The Market is Open and Tammy Sue Needs Our Help!

Howdy Food Club,

The market is open and SO ready for as many orders of local food as you can muster! Temperatures and mugginess would seem to indicate that we’re now officially into the real Arkansas summer, when simply stepping outside brings sweat stains almost instantly. It’s times like these that make me actually thankful to have a cozy job in the air conditioning. Farming is always tough work, so I really can’t even imagine what it’s like to toil in the over 100 degree heat. Thankfully, we’ve got a committed, talented, and tough team of growers that continue to provide us with the highest quality food all year-round. Thanks to their hard work, we’ve got…

  • All sorts of cuts of buffalo from Ratchford Farms. I’ve known for a while that getting it ground can make some of the most delicious, nutritious burgers around, but I can’t wait to try me some buffalo brisket, boneless strip steaks, ribeye steaks, sirloin steaks, tenderloin, or roast. The general rule is to cook buffalo pretty much the same as beef, except to watch out for overcooking because the meat is so lean.
  • Fresh purple hull peas from Hardin Farms. I’d never even heard of this highly nutritious legume until I first moved to Arkansas four years ago, but have absolutely fallen in love with figuring out new ways to enjoy them.
  • I’ve been loving the red torpedo and candy onions from Armstead Mountain Farm. For those of you that don’t know the Nuffers, they are one of the reasons that the Little Rock Local Food Club exists, which you can read more about here.
  • Fresh mountain mint from Food for Thought Farm. There’s more than a few uses for it, whether cleaning carpet, repelling bugs, making a spicy tea, or even reviving the dead? I can’t officially vouch for the last one…but the others and so much more are all possible with this versatile herb.
  • All sorts of early winter squash from Barnhill Orchards. I know, I know, it’s not quite winter yet (to put it mildly)…but these butternut, sunshine, acorn, and spaghetti squashes are all great for grilling.
  • I got to talking hot peppers with Robert from Willow Springs Market Garden the other day. I love a little heat in my life and have noticed that the jalapenos in Arkansas seem to be a lot hotter than the ones I grew up with in Pennsylvania. He reported that his Maule’s red hot is habanero hot, while the El Tiburon would be better for stuffing like a poblano. That’s also what I’d do with Bluebird Hill’s chillies. I’m determined to also try Arkansas Natural Produce’s serranos and Crimmins Family Farm’s cayennes and jalapenos to test out the different flavor profiles of all the heat Arkansas has to offer.
  • So many great goat’s milk products from Tammy Sue’s Critters. It’s hard to believe that just one person makes all of these body butters, bug banisher, laundry soap, lotions, hair bars, shaving bars, lip balms, beautiful gift baskets, and SO many kinds of incredible soaps, all with milk from her own goats. And somehow she offers all of these incredible products at an affordable price!

Speaking of Tammy Sue…she’s currently looking to crowdsource a loan of $5,000 to expand her operation by finishing phase two of her goat house and hay storage structures. By lending to her through kiva.zip, you’ll be helping an awesome local business expand through obtaining a bank-free, interest-free loan. This will allow Tammy Sue to provide more wonderful goat’s milk products, and within two years you’ll get your money back! Please help support this wonderful local business by sharing and supporting at this link.

Locally yours,

- Alex Handfinger
Director of Operations

CLG:  Opening Bell: Corn, Squash, Bacon, Tomatoes...

Good afternoon,

Cantaloupe, sweet corn, squash, bacon, tomatoes… Summertime in Arkansas is awesome with so much local goodness being produced right here! For easy and fast corn on the cob, microwave each un-shucked ear for 2 minutes. Then wrap it in a dishtowel for 2 minutes. Perfectly steamed every time. Carefully remove the husk. The silk just about falls off. And you don’t have to heat up your kitchen with a big pot of boiling water! A little butter and Beaverfork Blend and you’re set!

One of our own Growers is hoping to expand with kiva-zip! Please take a look at this link and help Tammy Sue’s Critters.

http://zip.kiva.org/loans/4875/i/5rom

Check out all the Featured Products as well. Use the SEARCH field on the main Market page to quickly find the items you want.

Come early on Friday for the best selection from the EXTRAS table.

The market is now +OPEN +for orders. Please check your email about 5 minutes after you place your order to make sure you get an order confirmation. Thank you for being a valuable part of CLG!

Have a great week!

Have you ever looked through the “Recipes” section of our Wednesday Market website? There are many inspiring recipes, but for some unknown reason, most of them feature fall and winter produce. There’s nothing wrong with that, but here we are – right in the MIDDLE of summer – and I think it’s time to share a recipe or two showcasing produce that is in season now.

I hope y’all like squash! I sure do. My favorite way to eat squash is fried, but I’m really particular when it comes to fried squash. No thickly sliced and battered squash for me. I only like it done the way that my folks do it. Mama learned how from my Mamaw, who sliced the squash very thinly, then added cornmeal mix and salt. You keep adding cornmeal until no more will stick to the squash. Then you fry it in a cast iron skillet, using a fair amount of hot oil. The squash is supposed to come out golden and crispy. While I know the theory behind frying squash this way, I am sorry to admit that I have not yet perfected the technique. Every time I try, I end up with burnt squash and a smoky kitchen. The best thing to do is just go to Mama’s house. I know she’ll do it right and the result will be delicious!

The following squash recipes were sent to us by Carmen Westerfield of Westerfield Farm in Molena. We hope they will inspire you to try cooking squash in new ways.

PATTYPAN SQUASH
2 large fresh tomatoes
5-6 medium pattypan squash
¼ cup melted butter (or olive oil)
1 bunch fresh basil
Sea salt
Grated parmesan cheese

Pre-heat oven to 350 degrees. Slice your squash, and then fine chop basil. Layer this in a casserole dish. Slice your tomatoes and layer them on the squash and basil. Sprinkle grated parmesan cheese on top and drizzle butter over layers. Bake for 30 minutes or until squash is tender.

STUFFED PATTYPAN SQUASH
1 cup grated zucchini
1 cup grated yellow squash
¼ teaspoon salt
6 small pattypan squash
1 tablespoon butter
½ teaspoon dried basil
Pinch pepper
1 tablespoon grated parmesan cheese

Combine zucchini, yellow squash and salt, stir gently. Let stand 30 minutes. Drain well, and press between layers of paper towels. Set aside. Cook pattypan squash in boiling salted water to cover 8 to 10 minutes or until tender but firm. Drain and let cool to touch. Cut 1/2 inch slice from stem end of each squash. Scoop out leaving shell intact. Place shells in a 13 × 9-inch dish. Melt butter in skillet. Add zucchini, yellow squash, and basil. Sauté 2 minutes. Spoon into shells and sprinkle with parmesan. Bake at 400 degrees for 15 minutes or until heated.

FROM YOUR MARKET CO-MANAGERS
To all our wonderful growers and customers: The Cumberland Farmers’ Market co-managers are growers and artisans, too (read: we’re also busy). We make every effort to respond to your calls and e-mail questions in a timely manner. Consequently, while the market is open (Sat. 5 p.m. to Mon. 10 a.m.), we will check once a day for your questions and get back to you. During the remainder of the week, we will check for your questions every other day. To get the fastest response, please send your questions to: cumberlandfm@gmail.com rather than any other address.

Another item: during the past month, we have had inquiries about fruit bars, energy bars, and the like. We have checked with out bakers and learned that the prices of ingredients (especially dried fruit and nuts) have risen exponentially. This would result in the price of such market items increasing at least 50 percent. If you feel so inclined and would like to pursue this, please e-mail us.
