Escarole Pasta Carbonara
This is absolutely delicious!
2 tbsp olive oil
2 cloves minced garlic
1 head escarole, washed and cut into medium sized pieces
1 egg
½ package whole grain spaghetti
½ cup grated Parmesan cheese

In a pan, combine olive oil and garlic, and let simmer over medium heat for a few minutes.
Add chopped escarole to the oil and garlic mixture, cooking over low-medium heat until tender (about 10 minutes).
Meanwhile, bring water to a boil and add pasta.
Cook until al dente, drain and immediately crack the egg into pasta. The egg gets cooked by the pasta.
Add escarole to the pasta mixture, and top with Parmesan cheese.
Mix it all together, serve, and ENJOY!

Stone County, AR:  The Market's Open!

Hi, Everyone!

Your online Market is now open for the week! You can find some great gifts and support your local growers at the same time!

Come on in!

Spa City Local Farm Market Co-op:  Just a reminder -

This is the last Spa City Co-op market before Christmas. If you’ve still got holiday shopping to do, please consider giving gifts from our huge selection of Co-op items. There is a fabulous selection of edibles that would make wonderful gifts, and are consumable; in other works, they won’t collect dust on someone’s shelf waiting to go in their next garage sale. If you’re entertaining, many of our products can make awesome additions to your holiday table. And you’ll know you’re keeping your holiday dollars local.
We suggest:
Jams, jellies, chutneys, and salsas from the Processed Foods category
Wow your Christmas dinner guests with homemade rolls from Hannah.
Make goody bags of yummy spiced nuts from Wolfe’s fresh pecans.
Baking and salad dressing mixes, Russian teas, or a custom gift basket from The Essential Housewife
Honey from Hamlet Honey, perhaps teamed with coffee, tea, or cocoa, makes a great gift.
And many, many more. Use your imagination.

Happy holidays from Spa City Co-op

Dear Green Fork Farmers Market Customers,

Don’t forget to place your order from now until Monday at midnight for pickup at the market on Wednesday. As usual, we have a great selection of naturally grown and handmade products available for preorder online. If you haven’t given it a try yet, ordering is easy, and it lets us know what we need to harvest and reserve for you so that the items you want will be available when you arrive at the market.

In addition to our preorder system, we also have many items available for sale directly from the farmers’ tables on Wednesday from 4-7 pm in the Breezeway at Nightbird Books on Dickson Street in Fayetteville. Braised Beef Short Ribs

I’m always looking for a good short rib recipe since short ribs are usually plentiful and economical on the market. The Smitten Kitchen has a great recipe. It’s worth traveling over to her blog to read the recipe and enjoy the pictures. Here’s the link

Market News

It hardly feels like December and the local strawberries haven’t helped… but they sure have been fun! If you missed the strawberries from Daylily Nursery last week be sure to get some this week. They are greenhouse grown and quite tasty.

Last summer Camp Discover took place in Tracy City. This was a great opportunity for kids and now they have a calendar available for a donation to the program. You can reserve this calendar on the market and then make a donation to the program when you come to pick up. This is not related directly to the CFM but we think it is a great program for our community. Here is some more information on the calendar and on the camp:

Looking for holiday gift ideas? Share the beauty of your community with family and friends this holiday season! Filled with pictures from Tracy City and the surrounding area, the Discover Together 2013 calendar is a collection of photos that documents the adventures of kindergarten-2nd grade students participating in a two-week summer camp, Camp Discover, at Tracy Elementary. Share in their adventures as they explore the South Cumberland State Park (Fiery Gizzard, the Natural Bridge, and Grundy Lakes) and other notable local landmarks, including Sewanee: The University of the South, the Grundy County Historical Society, and more! Tips for families and children that highlight ways to connect with one another and the community are featured each calendar month. The Discover Together calendar will make a special gift for adults and children alike.

You may obtain a calendar through the Cumberland Farmer’s Market. A donation is being asked for each calendar. All proceeds from the calendars will be used to fund future Camp Discover activities in Grundy County. For more information about Discover Together programs, email:

The Discover Together calendar was made possible by a generous donation from Scholastic. Discover Together and Camp Discover are part of an ongoing collaboration between Scholastic, Yale Child Study Center, and Sewanee: The University of the South.

Speaking of Holiday Parties, IvyWild has the savory treats, Smoked Duck, Smoked Salmon, and Tasso Ham.

Of course, all of the old favorites are still available and there may be a few new things I have missed too.

Market News

Hi Foodies!

Starting this week – we are testing our new ordering system.

ordering is open now and will close Monday night.

You now can order ANYTHINGEVEN IF the quantity says zero (email if there’s something you want and is ‘sold out’)

Order here today!

Pick ups will STILL be Wednesday night between 5&7pm (volunteer run) and Thursday 2-6pm (call ahead case by case basis)

An email and facebook msg will be sent out reminding everyone about the process.

The Birdhouse finally has again farm fresh eggs available (for pet consumption only of course), of which are coming from Ocoee FL – Lake Meadow Naturals Farm. Check them out by clicking here

Also, this week as you will see on the site, we have heirloom beets, broccoli, eggplant, baby spring mix, and more!

The boxes are changing slightly, instead of coming pre packaged, the customer/member will get to hand select the produce they want in their box.

So that means we still only have a select amount of boxes available – so be sure to buy yours asap!

So come early if you want to buy local, fresh and mostly organic produce!

Any extra produce that does not sell in the course of a week, there has been discussions about donating excess food to a local food program that the Tampa Underground runs.

Every Tuesday night, homeless and those in need congregate at the Good Samaritan off of Florida Ave and folks from the Tampa Underground facilitate a dinner for those folks.

If you are interested in helping, email

We’ll be there this Tuesday at 5:30pm – email if you want to join!

We can’t thank those who have been behind the scenes making all this stuff happen – so to those who know who they are, THANK YOU for your help from farm to fork to the website and more.

Without volunteers, non of this awesome local & regional food would be possible.

If you’d like to get involved, please send an email to, or simply show up to the co-op near Ella’s and lets have a chat!

Some cool events & happenings are in the pipeline.

Thanks again to everyone for their support.
