Cheesy Feta Tomato Slices

Ingredients
2 extra large Tomatoes
3 Eggs
1 handful Spinach (chopped)
1/2 block Feta cheese (crumbled)
1/2 teaspoon Garlic powder
1/2 teaspoon Onion powder
Salt & pepper to taste
1 cup Shredded mozzarella cheese
Fresh basil (for garnish)

Step by Step Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Slice the tomatoes into thick rounds with thick side boarders. Use a paring knife to remove the innards of each tomato round. Chop the tomato innards into small pieces.
  3. Put the tomato rounds onto the prepared baking sheet.
  4. Beat the eggs in a bowl, then mix in the tomato innards, chopped spinach, crumbled feta, garlic powder, and onion powder.
  5. Fill each tomato round with the egg mixture, then top each one with shredded mozzarella cheese.
  6. Bake for 25 minutes, then garnish the slices with fresh basil.
