Kale and Apple Toss-Up

Serves: Serves 8


Ingredients
2 Tbsp Cider vinegar
1 tsp Dijon mustard
2 Large Celery ribs, thinly sliced
1 Bunch Kale (1/2 to 1 lb)
1/3 Cup Sesame sticks
Pinch Salt and Pepper
3 Tbsp EVOO (Extra Virgin Olive Oil)
2 Apples, cored and sliced

Step by Step Instructions
  1. In extra-large bowl, whisk together vinegar, mustard, 1/2 tsp salt and 1/4 pepper. Whisk in EVOO. Add apples and celery, toss to coat. Take kale, ribs trimmed and discarded, and cut leaves cross-wise 1/2 inch wide. Pile kale on top. (Don't mix in yet). Cover and refrigerate until ready. Before serving, toss salad and sprinkle with sesame sticks. Enjoy!
