Go with it. It is fabulous! (Well, you have to like cilantro…) Over rice or rice noodles, hot or cold.
Source: Major modifications from cooking.com (Entered by Lara Rasmussen Anderson)
Step by Step Instructions
- Cut tofu into bite-sized cubes or rectangles (1-1.5cm x 2-2.5cm).
- In a large pot, add seasoning and tofu and cover with water. Simmer for 15min. Remove from heat and allow to sit covered until ready for use, then drain.
- In a medium bowl, toss together the onion, bell pepper, garlic, lime juice, salt and hot sauce and let marinate for 15 minutes.
- In a large sauté pan over medium-high heat, heat the olive oil. Add the onion and bell pepper mixture, the seasoned tofu, and 2/3 cup cilantro. Sauté until the tofu is just cooked through, about 5 to 7 minutes. Season to taste with salt and freshly ground pepper.
