SHH Irish Soda Bread

<p>This is a salute to Nana! Marie Abigail O’Reilly Stapleton <span class="caps">AKA</span> Nana. Happy St. Patrick’s Day. The first thing Irish my husbands mother showed me how to bake was Irish Soda Bread. Her bread was from scratch and baked on a flat skillet in the oven. A loaf was always sitting on her kitchen table waiting for us to slice it up smother it in butter and savor the goodness and love with which it was baked. I bake Irish soda Bread especially on St. Patrick’s Day but over the years I have taken a short cut from her original recipe. Back when I was a busy working mom and busy children. Serves: 12 to 14 slices
2 cups bisquick mix
1/2 teas. baking powder
2 Tables. sugar
2 Tables. caraway seeds
1/2 cup seedless raisins
1 cup buttermilk or sour milk
Step by Step Instructions
- Set oven to 350 degrees. Mix together dry ingredients; raisins and seeds. Add buttermilk; stirring until well blended. Turn into greased loaf pan. Bake approx. 35 to 40 minutes
- remove from pan to a cooling rack. The best slice is the first that we eat while it is still warm. Thank you Nana.
- How to make sour milk. add 1 Tablespoon of lemon juice or vinegar to 1 cup of milk and let it set for about 5 minutes.
