Peach Cobbler Wedges

Serves: 2-3


Ingredients
2 Tbsp ground flax seed
4 Tbsp boiling water
1 Tbsp almond/soy/coconut/hemp milk
3 Tbsp brown sugar
1/2 cup rolled oats (not instant)
1/4 cup quinoa, washed and dried (not cooked)
1/2 tsp cinnamon
1/4 tsp ground ginger
pinch nutmeg
pinch cloves
1/4 cup cashew pieces
2-3 peaches, ripe but firm

Step by Step Instructions
  1. Heat oven to 350 degrees.
  2. In a small bowl, whisk flax and hot water together, then add milk and mix. Set aside.
  3. Put all the dry ingredients in blender or food processor and blend until there are just small crumbs. Put in small bowl.
  4. Cut peaches into large wedges so they are about 1 inch thick. Dip them into the flax mixture and then roll them in the crumb mixture. Place them on a parchment paper lined baking pan.
  5. Bake about 30-35 minutes or until fork tender, not mushy.
  6. Serve with coconut yogurt, cashew cream, or alone.
