Zucchini Patties

<p>This recipe came from one of our <span class="caps">CSA</span> members, and when zucchini came in we cooked it as a meal with all the interns that were here on White Pine Farm. It rated high on the taste bud scale.</p>

Serves: 4 servings

4 zucchini, grated
2 eggs, beaten
4 Tablespoons flour
3/4 parmesan cheese
vegetable oil
salt and pepper to taste

Step by Step Instructions
  1. Squeeze excess water from zucchini. Place in bowl and combine with cheese, flour, egg, salt and pepper
  2. Heat oil in skillet and place 3 Tablespoons of zucchini mixture, turn when browned.
  3. Cook till evenly browned. Serve with applesauce, sour cream, or green chilli jam
