Potatoes with Garlic and Thyme

<p>Any variety of potato will work in this dish. In fact, it looks quite beautiful to combine a few different varieties!</p>

Serves: 4 to 6 as a side dish


Ingredients
2 lbs potatoes, skins on
6 cloves garlic, skins on
olive oil
salt & pepper to taste
1/4 tsp dried thyme or 3 or 4 sprigs of fresh thyme

Step by Step Instructions
  1. Preheat your oven to 375 F. Cut potatoes (skins on) into rough ½ to ¾ inch pieces & place in a baking pan. Pull apart your garlic cloves and place them skins and all into the pan – as many as you’d like, really.
  2. Drizzle liberally with olive oil. Sprinkle lightly with dried thyme or tuck in 3 or 4 fresh thyme stems. Salt and pepper to taste. Toss lightly.
  3. Roast covered with foil at 375 F for 20 min. Remove cover and roast for another 20min. or until caramelized and tender.
