Roasted Rabbit With Garlic and Olives

Serves: Serves 4

1/2 cup all-purpose flour
1 tsp salt
1 rabbit whole rabbit
1 tsp pepper
5 tbsp olive oil
1/2 cup garlic cloves - minced
1/2 cup green olives - chopped
3 sprigs fresh thyme leaves

Step by Step Instructions
  1. Preheat oven to 350 degrees F.
  2. Mix flour, salt and pepper in a bowl. Coat rabbit in mixture.
  3. In a large cast-iron skillet, heat 3 tbsp olive oil on medium heat. Brown the rabbit in the skillet for 4-5 minutes on each side.
  4. Mix garlic and olives with 1 tbsp olive oil.
  5. Sprinkle the rabbit with garlic, olives and thyme.
  6. Bake for about an hour. The USDA recommends cooking rabbit to an internal temperature of 160 degrees F.
  7. Drizzle 1 tbsp olive oil aesthetically on a serving platter and arrange the rabbit on top.
  8. Scoop any fallen garlic and olives from the baking pan and sprinkle over rabbit.
