Roasted Beets with Feta

Serves: serves 4 as a side dish

4 beets
1/4 cup minced shallot
2 TBS minced parsley
2 TBS extra virgin olive oil
1 TBS balsamic vinegar
1/4 cup crumbled feta cheese
1 TBS red wine vinegar
salt and pepper to taste

Step by Step Instructions
  1. preheat oven to 400 degrees. Wrap each beet in foil and place on baking sheet
  2. bake beets in preheated oven until easily pierced with a fork; 45 minutes to one hour. Once done, let cool until you handle them and then peel and quarter beets
  3. while beets are roasting, whisk together shallot, parsley, olive oil, and vinegars in a bowl until blended; season with salt and pepper and set aside
  4. to assemble the dish, place the warm, sliced beets onto a serving dish, pour vinaigrette over the beets and sprinkle with feta cheese efore serving
