Easy Chicken Gumbo

<p>This is not a true, Cajun-style gumbo, but it&#8217;s an easy version that takes advantage of two summer standards &#8211; okra and tomatoes.</p>

Ingredients
3 Tbsp butter
2 cups sliced okra
1 small onion, chopped
1/2 small green pepper, chopped
4 cups chicken broth
2 cups chopped tomatoes
1 small bay leaf
1 tsp salt
Dash ground red pepper
2 cups chopped cooked chicken
1 Tbsp snipped fresh parsley
3 cups hot cooked rice

Step by Step Instructions
  1. Heat butter in 3-quart saucepan until melted. Add okra, onion, and green pepper and cook and stir until onion is tender. Stir in broth, tomatoes, bay leaf, salt, and red pepper. Heat to boiling; reduce heat. Simmer uncovered for 15 minutes. Stir in chicken and parsley; heat through. Serve over hot cooked rice.
