Garlic Roasted Eggplant

Serves: 2

1 eggplant, cut into large strips or slices
3 tbls olive oil
1 clove garlic, minced or 1/4 tsp garlic powder
sprinkle Beaverfork Blend and/or sea salt, on top
sprinkle parmesan cheese, grated
sprinkle fresh herbs, chopped (basil, oregano, rosemary, sage, thyme)

Step by Step Instructions
  1. Preheat oven to 400 degrees F. Lightly grease a baking pan or put parchment paper on top of a baking pan.
  2. Lay the eggplant on the pan evenly. In a small bowl, combine olive oil and garlic. Drizzle the garlic olive oil over the eggplant. Lightly dust with salt and bake for 15 minutes.
  3. Then turn the eggplant over and bake again for another 10 to 15 minutes or until the eggplant starts to get a nice deep brown color on the edges.
  4. Take out the eggplant and put on a serving platter. Sprinkle with parmesan cheese and herbs. Enjoy!
