Chipotle-Lime Chimichurri

Serves: 4-8 servings

3 1/2 cups fresh parsley and/or cilantro leaves
1/2 medium red onion, coarsely chopped
1-2 pc chipotle peppers in adobo sauce
5 pc garlic cloves, sliced
1/2 cup olive oil
1/4 cup white wine vinegar
1 teaspoon grated lime zest
1/4 cup lime juice
3 teaspoons dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper ground

Step by Step Instructions
  1. place the first 4 ingredients in a food processor; pulse until finely chopped.
  2. add the rest of the ingredients and process until blended. Transfer to a bowl; refrigerate, covered, until serving.
