Crispy Slaw with Cucumber Dressing

<p>This is a vinegar based slaw made with Casa Perdido Cucumber Vinegar. This type of slaw is similar to a Health Salad, Pepper Slaw or a Southern Slaw. Since there is no dairy products used it makes a perfect summer picnic salad. It is healthy and easy to tweak to suit your taste. It refrigerates well and taste better if it sits overnight in the fridge.</p>

Serves: 4-6 good size servings
Vegetarian!

Ingredients
1 head cabbage--small to medium)
1/2 each red and green pepper chopped
1 each carrot shredded
1 each medium onion chopped or shredded
3/4 cup sugar
1/2 cup Casa Perdido Cucumber Vinegar
1/2 cup oil (I prefer Olive but any will work)
1 tsp celery seed
Salt and Pepper

Step by Step Instructions
  1. Chop and mix all ingredients in bowl
  2. Salt and pepper to taste
  3. Refrigerate for at least 2 hours before serving
