Beet Soup/Borscht

<p>A vegetable rich beet soup you can make with predominantly Market2Go sourced ingredients. Soup is often served with a sour cream and grated cucumber mixture atop it and with a side of bread or rolls. Can be enjoyed warm or chilled. Serves: About 5 cups


Ingredients
1/2 cup Finely chopped carrots
2 cups Finely chopped skinned onions
2 cups Finely chopped beets
1 tablespoon Butter
2 cups Beef or other stock
1 cup Finely shredded cabbage
1 tablespoon Sour cream
1 tablespoon Vinegar
As much grated cucumber as desired
As many slices of bread as desired
or rolls

Step by Step Instructions
  1. Skin onions and chop carrots, onions, and beets until very fine.
  2. Barely cover ingredients with boiling water and simmer them in a covered pot for 20 minutes. Add butter, stock, cabbage, and vinegar and simmer for 15 more minutes.
  3. Ladle the soup into bowls. Mix sour cream and grated cucumber together before adding it to the bowls of borscht. Serve with bread or rolls.
