Puffed Cheese with Mushrooms on Toast

Serves: 6 servings
Vegetarian!

Ingredients
1 tablespoon Butter
1/2 cup Finely sliced mushrooms
1 teaspoon Grated onion
2 Egg yolks
2 cups Shredded cheese
3/4 teaspoon Salt
1/4 teaspoon Pepper
A little Cayenne pepper (if desired)
2 Egg whites
6 slices Bread
Butter for spreading

Step by Step Instructions
  1. Preheat oven to 375 degrees. Melt 1 tablespoon of butter in a saucepan, then add mushrooms and onion and saute them until they are tender. Set the mixture aside.
  2. Combine egg yolks, cheese, salt, pepper, and cayenne pepper (if using) and heat the resulting mixture. Stir in the mushroom and onion mixture and beat the combined mixture until it thickens. Fold in the egg whites.
  3. Toast 6 slices of bread on one side, then place them untoasted side down on a cookie sheet. Spread the upward side with butter, then heap the cheese mixture onto the bread. Bake the slices in the oven until the cheese is firm to the touch and well puffed.
