Mocha Icing

Serves: About 1 1/4 cups
Vegetarian!

Ingredients
1 2/3 cups Confectioner's sugar
1 or 2 tablespoons Cocoa
1/4 or 1/2 cup Butter
1/8 teaspoon Salt
3 tablespoons Your favorite blend of hot coffee
1 teaspoon Vanilla or almond extract (or rum if you prefer)

Step by Step Instructions
  1. Sift the confectioner's sugar and the cocoa and set them aside. Beat the butter until it is soft and add the sugar and cocoa gradually until the mixture is creamy.
  2. Add the salt and hot coffee to the butter mixture and beat for 2 minutes. When the icing has cooled add either the vanilla or almond extract or rum.
  3. Let the icing stand for 5 minutes. Beat well and spread.
