Roasted Zucchini and Tomatoes

Ingredients
3 cups Chopped zucchini
1 cup Chopped tomatoes
1 cup Chopped banana peppers (optional)
2 tablespoons Olive oil
1/2 teaspoon Salt
1 teaspoon Italian seasoning
1/4 teaspoon Pepper
1 teaspoon Crushed garlic
2 tablespoons Grated Parmesan cheese
Can be served with rice
Or pasta
Or chicken
Or fish

Step by Step Instructions
  1. Preheat oven to 400 degrees, and spray a cooking sheet with nonstick cooking spray.
  2. Toss the ingredients together in a large bowl, then put the mixture onto the cooking sheet.
  3. Cook for 30 minutes, then flip and bake for 10 minutes more. Serve over rice or pasta, or as a side dish alongside chicken or fish.
