Persimmon Chestnut Spice Cookies

Ingredients
2 Ripe persimmons (stemmed and quartered)
1 teaspoon Baking soda
2 cups Flour
1/2 teaspoon Cinnamon
1/2 teaspoon Ginger
1/4 teaspoon Nutmeg
1/2 teaspoon Salt
1 Egg
1 cup Sugar
1 stick Butter
1 cup Dried cranberries
1 cup Chopped chestnuts

Step by Step Instructions
  1. Put the persimmons and the baking soda and puree. Set the mixture aside.
  2. Sift together the flour, cinnamon, ginger, nutmeg, and salt. Set the mixture aside.
  3. Cream the butter and sugar together, mix in the egg and persimmon mixture, then stir in the flour mixture, and finally stir in the cranberries and chestnuts.
  4. Preheat the oven to 350 degrees. Scoop the cookies onto a cookie sheet covered with a silicone mat. Bake for 12 to 15 minutes.
