Seafood Soft Tacos

Ingredients
1 pound Flounder
1/3 cup Chopped pepper or peppers of choice
1/4 cup Chopped onion
1 tablespoon Olive oil
1 medium sized Tomato (chopped)
1/4 teaspoon Salt
1/8 teaspoon Garlic powder
1/8 teaspoon Ground cumin
1/8 teaspoon Pepper
4 Tortillas (warmed)
1 tablespoon Fresh cilantro (minced)

Step by Step Instructions
  1. Place the flounder in a greased 7 by 11 inch baking pan. Set the oven to 350 degrees and bake it uncovered for about 20 to 25 minutes. Remove it from the oven and cut it into 1 inch pieces.
  2. In a skillet, saute the chopped pepper and onion in the oil. Stir in the tomato, salt, garlic powder, cumin, and pepper. Cook for about 1 minute, stirring them all together. Add the flounder, mixing it in as well and letting it heat through.
  3. Spoon the mixture into the tortillas, sprinkle cilantro over the mixture within, then fold the tortilla and enjoy.
