Kapia Peppers Stuffed with Feta

4 Kapia peppers
OR other long & sweet peppers
1/3 pound Feta cheese (cut into 1/2 inch strips)
4 cloves Garlic (peeled)
1 Lemon (reserve juice and cut the peel into strips)
4 small Fresh sprigs of parsley
4 small Fresh sprigs of oregano
1/4 teaspoon Pepper
Olive oil (for drizzling)
Bread for serving
Step by Step Instructions
- Cut off the tops of the peppers and remove the seeds. Blanch the peppers, garlic, and the lemon in boiling water for 15 minutes.
- Remove the now blanched ingredients from the boiling water and let them drain & cool on paper towels. Preheat your broiler on the low setting.
- Stuff the peppers with feta, garlic, lemon peel, parsley, oregano, and pepper. Place the stuffed peppers onto a sheet pan and broil for 15 to 20 minutes, turning often.
- After allowing the peppers to cool slightly, drizzle them with olive oil & lemon juice. Serve with bread.
