Persimmon Salsa

<p>This is a sweeter salsa. It goes great with chips as well as fish tacos!</p>

Serves: 2 Cups
Vegan!

Ingredients
1/4 cup Red Onion, Finely diced
1/2 each Jalapeno, finely chopped
2 tablespoons Lime Juice
1/4 teaspoon Salt
3-4 each Fuyu Persimmons
1/4-1/2 cup Pomegranate Seeds

Step by Step Instructions
  1. Finely chop the onions and jalapeno and place in a bowl.
  2. Toss with the lime juice and salt.
  3. Dice the persimmons, chop the cilantro and toss with the onion mixture.
  4. Taste, adjusting salt and lime, adding more to taste, until flavor pops!
  5. Garnish with pomegranate seeds (optional, but pretty).
