Pecan Crusted Salmon

Ingredients
1 pound Salmon fillet or fillets (skin on if possible)
3/4 teaspoon Salt
Pepper to preference
1 1/2 tablespoons Dijon mustard
1 1/2 tablespoons Honey
OR maple syrup
1/4 cup Pecans (finely chopped)
2 tablespoons Italian panko breadcrumbs
2 tablespoons Grated Parmesan cheese

Step by Step Instructions
  1. Preheat the oven to 425 degrees. Bring the salmon to room temperature and pat it dry, then season it with the salt & pepper. Mix the mustard & honey/maple syrup together in a bowl, then brush it on to the salmon.
  2. In a separate bowl, mix the pecans, breadcrumbs, and Parmesan cheese together, then sprinkle the mixture on top of the salmon.
  3. Bake the salmon for 15 to 20 minutes, then serve.
