Mediterranean Cabbage Salad

Vegan!

Ingredients
FOR THE VINAIGRETTE:
2 tablespoons Dijon mustard
2 cloves Garlic (minced)
2 Limes (juiced)
1/3 cup Olive oil
1/2 teaspoon Sumac
pinch of Salt & Pepper
1/2 teaspoon Red pepper flakes (optional)
FOR THE SALAD:
4 cups Green cabbage (shredded)
2 cups Red cabbage (shredded)
1 cup Shredded carrot
2 Green onions ( trimmed, chopped (both white and green parts)
1 Bell pepper (preferably red, cored and cut into thin sticks)
4 large Radishes (halved and thinly sliced)
1 cup Fresh parsley (chopped)
1/2 cup Fresh dill (chopped)
1 teaspoon Sumac
Salt
1 cup Almonds (toasted & sliced)

Step by Step Instructions
  1. Whisk all of the ingredients in the vinaigrette section together in a bowl.
  2. Put both types of cabbage, the carrots, onions, red bell pepper, radishes, parsley and dill together in a large bowl and gently mix them together. Add the salt, sumac, and almonds, then gently toss again to combine.
  3. Pour the vinaigrette over the salad and gently toss again to combine. If possible, put the salad into the fridge for 30 minutes to 1 hour to let the vegetables absorb the flavors of the vinaigrette more.
