Creamy Cajun Chicken Pasta

Ingredients
2 tablespoons Olive oil
1 pound Chicken breast (chopped into small pieces)
1 large Onion (chopped)
1 medium sized Bell pepper (preferably green, chopped)
2 Jalapenos (chopped)
1 stalk Celery (chopped)
4 cloves Garlic (minced)
6 ounces Tomato paste
1 cup Chicken stock (plus more if needed)
2 teaspoons Cajun seasoning
Salt & Pepper to preferance
3 ounces Cream cheese
2 tablespoons Sour cream
8 to 10 ounces Cooked pasta of choice
Sliced lemon (for serving)
Chopped fresh parsley (for serving)

Step by Step Instructions
  1. Heat a large pan over medium heat, then add the olive oil. Add the chicken, onion, bell pepper, jalapenos, and celery, then cook for 7 to 8 minutes. Add the garlic and cook for 1 more minute.
  2. Add the tomato paste, chicken stock, Cajun seasoning, and salt & pepper. Stir everything together, reduce the heat, then let simmer for 15 minutes.
  3. Add the cream cheese & sour cream, then stir them into the mix. Add your cooked pasta of choice and stir it in. Serve in bowls with sliced lemon and chopped fresh parsley.
