Arroz con Tres Leches (aka Three Milks Rice Pudding)

Ingredients
1 cup Long-grain white rice (washed)
2 Cinnamon sticks
2 cups Water
2 cups Whole milk
1 cup Evaporated milk
1 12 ounce can Sweetened condensed milk
1 cup Heavy cream
1 pinch Salt
1 1/2 tablespoons Vanilla extract
1/2 cup Sugar
TOPPING SUGGESTIONS INCLUDE:
Whipped cream
Fresh berries
Fresh peaches
And/or cherries

Step by Step Instructions
  1. Combine the rice, water, and salt in a saucepan over high heat. Bring the mixture to a boil. Add the cinnamon sticks and reduce the heat to medium-low. Cook uncovered for 30 to 35 minutes, stirring very occasionally. Remove the cinnamon sticks from the rice.
  2. Mix the whole milk, evaporated milk, heavy cream, vanilla extract, sugar and condensed milk in a bowl. Pour the milk mixture over the rice, then reduce the heat to low and cook for 20 minutes. Again, stir very occasionally.
  3. Before serving, either allow to cool slightly or refrigerate until ready to serve. Spoon the pudding into bowls and top as desired.
