Beet Cookies

Ingredients
1/2 cup Peanut butter
1 Egg
3 tablespoons Pureed beets
1 tablespoon Tapioca flour
1 teaspoon Vanilla extract
1/4 cup Dark chocolate chips
1/4 cup Brown sugar

Step by Step Instructions
  1. Preheat oven to 375 degrees.
  2. Put the peanut butter, egg, and brown sugar into a bowl and mix them together. Add the beet puree, tapioca flour, vanilla and chocolate chips and mix well.
  3. Scoop out spoonfuls of dough, roll them into balls, then flatten the balls. Bake for 10 minutes, then serve.
