Ruby Red Beet & Apple Salad

Vegetarian!

Ingredients
2 1/2 pounds Beets
2 medium sized Apples
1 cup Kale (chopped)
1 cup Red cabbage (chopped)
1 cup Shredded carrot
1/2 cup Onion (chopped)
1/2 cup Cider vinegar
1/3 cup Olive oil
2 tablespoons Honey
1 teaspoon Salt
3/4 teaspoon Curry powder
1/8 teaspoon Ground ginger
1/8 teaspoon Garlic powder
1/8 teaspoon Pepper

Step by Step Instructions
  1. Scrub the beets and trim off the tops.
  2. Place the beets into a Dutch oven and add water to cover. Bring to a boil, then reduce the heat, cover, and simmer for 30 minutes to 1 hour. Remove the beets from the water to cool.
  3. Peel the beets and cut them into cubes. Combine the beets, apples, kale, cabbage, carrots, onion in a bowl.
  4. Whisk the vinegar, oil, honey, salt, curry powder, ginger, garlic powder and pepper together. Pour the mixture over the salad
  5. Cover the salad, then put the it into the fridge and chill for at least 4 hours (stirring occasionally) before serving.
