Candied Jalapenos

Vegan!

Ingredients
1/2 pound Jalapenos (sliced into 1/4 inch round slices)
1 cup Sugar
1/2 cup Apple cider vinegar
1 teaspoon Chili powder (optional)
1/2 teaspoon Turmeric powder
1/2 teaspoon Ground ginger

Step by Step Instructions
  1. Stir the sugar, vinegar, chili powder (if using), turmeric powder, and ground ginger in a pot or pan. Quicklt bring to a boil, then reduce to a low simmer.
  2. Add the pepper slices to the vinegar mixture. Mix & toss to ensure a good coating on the pepper slices. Simmer for 4 minutes.
  3. Put the pepper slices into prepared jars and fill the jars with the remaining vinegar syrup. Cover and store in the refrigerator for up to 3 months.
