Roasted Beef Grilled Cheese Sandwich

Ingredients
2 slices Bread (toasted)
6 slices Roast beef (cooked)
4 slices Provolone cheese
OR Mozzarella cheese
1/2 tablespoon Olive oil
1 tablespoon Diced onion
1 tablespoon Diced bell pepper (at least)
2 Mushrooms (sliced)
Salt to taste
Pepper to taste
Red chili flakes to taste
1/2 tablespoon Mayonnaise
1/2 tablespoon Hot sauce
Unsalted butter

Step by Step Instructions
  1. Add the onion, bell pepper, and mushroom to a pan, then add salt, pepper, and chili flakes to suit your tastes. Saute for 4 to 5 minutes over medium-high heat. When finished sauteing, place the veggie medley onto a paper towel to drain.
  2. In a fresh pan, melt unsalted butter over low heat, then put the toast. Mix the mayonnaise & hot sauce together, then spread the mixture evenly over both slices of toast. Put the cheese of choice & the roast beef slices (2 or 3 on each piece of toast), then put the veggie medley onto one slice.
  3. Put the slice without the veggies on it onto the other one. Toast for 1 or 2 minutes, flip the sandwich over, then toast that side for 1 or 2 more minutes. Turn the heat to low, cover the pan with a lid. Periodically uncover the pan and flip the sandwich over until the cheese has melted fully, then enjoy while warm.
