Peach Cobbler Cookies

Serves: 4 1/2 dozen cookies
Vegetarian!

Ingredients
1 cup Butter (softened)
1 cup Sugar
1/3 cup Packed brown sugar
1 large Egg (room temperature)
1 teaspoon Vanilla extract
1/4 teaspoon Almond extract
3 cups All-purpose flour
1 1/2 teaspoons Ground cinnamon
1 teaspoon Cream of tartar
1 teaspoon Baking soda
1/2 teaspoon Salt
1/4 teaspoon Ground nutmeg
1 cup Fresh peaches (peeled & chopped)
Vanilla ice cream for serving

Step by Step Instructions
  1. Preheat oven to 350 degrees and prepare baking sheets with parchment. Whisk the flour, cinnamon, cream of tartar, baking soda, salt and nutmeg together in a bowl. Set aside.
  2. Cream the butter & sugars together, stirring for 5 to 7 minutes, then beat in the egg & extracts. Gradually stir in the dry mixture, then once wall mixed, stir in the peaches.
  3. Working in batches, bake the cookies 2 inches apart on the prepared baking sheets for 14 to 16 minutes. Cool for 2 minutes, then set onto wire racks to cool fully.
