Cucumber Sandwiches

Serves: 8 whole sandwiches or 32 tiny sandwiches
Vegetarian!

Ingredients
16 slices Bread (crusts removed, original recipe suggests white)
1 Cucumber (possibly more if using small)
8 ounces Cream cheese (softened)
1/4 cup Mayonnaise
1 tablespoon Minced fresh dill
1 tablespoon Minced fresh chives
1 tablespoon Lemon juice
1/4 teaspoon Garlic powder
1/4 teaspoon Kosher salt
Pepper to taste

Step by Step Instructions
  1. Peel the cucumber, then cut it into 1/8 inch thin slices. Place the slices onto a paper towel and sprinkle them with coarse salt and let rest for 15 to 30 minutes. Pat dry after time has passed.
  2. While the cucumber slices sit, mix the cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, and salt together with a handheld mixer.
  3. Spread the cream cheese mixture onto one side of each slice of bread, then lay out the cucumber slices onto half of the slices, season them with pepper to taste, then top with the remaining bread slices.
  4. If desired, cut each sandwich into quarters to have 32 tiny sandwiches.
