Pea Shoot Savory Pancakes

Ingredients
3 large Eggs
1 cup Cottage cheese
2 tablespoons Olive or camelina oil
1/2 cup Garbanzo bean (chickpea) flour
1 clove Garlic (minced)
2 teaspoons Lemon zest
1/2 teaspoon Salt
1 cup Pea shoots (chopped)
3 tablespoons Chopped fresh chives
Butter (for topping, optional)
Hummus (for topping, optional)
Additional pea shoots (for topping, optional)

Step by Step Instructions
  1. Blend the eggs, cottage cheese, oil, flour, garlic, lemon zest, and salt together in a blender or food processor. Once combined, pulse in the pea shoots and chives.
  2. Lightly grease a heated skillet over medium heat. Working in batches, add the batter to the skillet 1/4 cup at a time. Cook the pancakes for 2 to 3 minutes on one side, flip, and cook for 1 minute on the alternate side.
  3. Cool slightly, then serve with butter, hummus, and/or additional pea shoots for toppings.
