Ingredients
FOR THE DRESSING:
1/4 cup Olive oil
2 tablespoons Balsamic vinegar
1 teaspoon Dijon mustard
1 tablespoon Maple syrup
1/2 clove Garlic (minced)
Salt & pepper to taste
FOR THE SALAD:
4 cups Microgreens
2 Peaches (sliced)
1 Avocado (thinly sliced)
1/2 of a Small onion (preferably red) (thinly sliced)
1/2 cup Feta cheese (crumbled)
1/2 cup Pecans (toasted & chopped)

Step by Step Instructions
  1. Make the dressing: Combine olive oil, balsamic vinegar, Dijon mustard, maple syrup, and garlic in a small jar. Cover and shake the jar until the contents are well mixed. Season to taste, then set aside.
  2. Put the microgreens of choice, peaches, avocado, red onion, feta cheese, and pecans into a large bowl. Toss until well combined, add the dressing, toss again, then serve.
