Skillet Cajun Spiced Fish with Tomatoes

Ingredients
1 teaspoon Olive oil
4 6 ounce pieces White fish fillets (flounder, fluke, tilapia)
3/4 cup Onion (chopped)
2 cloves Garlic (minced)
3/4 cup Bell pepper (diced)
2 1/2 cups Tomatoes (chopped)
1 tablespoon Cajun spice

Step by Step Instructions
  1. Cook the onion & garlic in olive oil in a deep skillet over medium heat for a few minutes to soften them, then add the tomatoes, peppers and Cajun spice. Cook & stir for 2 to 3 minutes.
  2. Add the fish fillets to the skillet with the sauce, cover, and cook on low heat for 12 to 15 minutes.
  3. Serve the fillets with a spoonful of the sauce poured over them.
