Squash Glazed Chicken Wings

Ingredients
5 pounds Chicken wings
1/2 of an Butternut squash (peeled & cubed)
1/3 cup Tamari sauce
1/4 cup Olive oil
3 cloves Garlic (roughly chopped)
1 Onion (chopped)
1 inch Piece of ginger (peeled and roughly chopped)
Juice from 1 lime
Zest from 1 lime
1 teaspoon Fish sauce (optional)
1/8 teaspoon Cayenne pepper

Step by Step Instructions
  1. Preheat the oven to 400 degrees and prepare parchment lined baking sheets with cooling racks on each. Put 12 wings onto each baking sheet skin side down and bake for 15 minutes.
  2. Combine the butternut squash, Tamari sauce, olive oil, garlic, onion, ginger, lame juice & zest, (and fish sauce & cayenne pepper if using) in a pot, bring to a boil, then cover and let cook for 5 minutes. Remove from heat, then blend the ingredients in a food processor until they form a smooth paste. Put the paste into a bowl.
  3. Remove the wings from the oven, then gently toss them in the butternut paste. Place the wings back onto the cooling racks (skin side up this time) and bake for 15 more minutes.
