Pea Pulao with Lemon

Ingredients
3/4 cup Basmati rice
1 Onion (diced)
2 tablespoons Olive oil
2 tablespoons Honey
1 teaspoon Turmeric
1 teaspoon Cumin
1/2 teaspoon Salt
1 cup Peas
14/ to 1/2 cup Peanuts (de-shelled)
1 1/2 cup Vegetable broth
3 tablespoons Lemon juice
OR orange juice
1 clove Garlic (grated)
1/2 teaspoon Black pepper
2 tablespoons Vinegar
1/3 cup Rasins
1 teaspoon Lemon zest
OR orange zest

Step by Step Instructions
  1. Simmer the diced onion in the olive oil in a pot for a short time, then add the honey, turmeric, cumin and salt and stir.
  2. Add the peanuts, peas and raisins, let everything simmer for 1 or 2 minutes, then add the rice & vegetable broth and stir gently. Cover and simmer for 15 minutes.
  3. In a separate bowl add the grated garlic, citrus juice & zest of choice, the vinegar, and salt & pepper to taste. Stir to combine.
  4. Add the dressing to the rice, then serve.
