Smoked Chuck Roast with Veggies

Serves: 6

4 pound Chuck roast
2 teaspoons Salt
2 teaspoons Pepper
2 teaspoons Garlic powder
2 teaspoons Onion powder
5 Carrots (cut into 2 inch pieces)
Small potatoes
1 Onion (cut into quarters)
14 ounces Beef broth
Hickory or Oak wood chips for the smoker

Step by Step Instructions
  1. Prepare the smoker and preheat it to 225 degrees. Season the roast on all sides with the salt, pepper, garlic powder, and onion powder.
  2. Place the roast directly onto a smoker rack and cook it until it reaches an internal temperature of 165 degrees.
  3. Put the roast into a pan along with the veggies and add the broth. Put the pan into the smoker, cover it, and cook for 3 to 4 hours
  4. Remove the roast and serve it.
