Creamed Swiss Chard

Vegetarian!

Ingredients
2 tablespoons Olive oil
1 1/2 tablespoons Flour
3 cloves Garlic (finely chopped)
1 1/4 cups Plain soy milk
2 pounds Chard (washed, stems removed, and cut crosswise into 1/2 inch strips)
1/2 teaspoon Pepper
1 tablespoon Grated Parmesan cheese

Step by Step Instructions
  1. Heat the olive oil in a large skillet over medium heat. Whisk the flour in with the oil and make a smooth paste.
  2. Continue whisking the paste and add the garlic. Let the mixture cook for 30 seconds, then whisk in the soy milk.
  3. Let the mixture cook a little bit longer to thicken, then add the chard and stir to coat it.
  4. Cover the pan and cook for 2 minutes. Season with pepper, and serve hot and topped with Parmesan cheese.
