Chicken Soup with Cabbage

Ingredients
2 tablespoons Olive oil
2 medium sized Carrots (chopped)
2 ribs Celery (chopped)
1 medium sized Onion (chopped)
2 cloves Garlic (minced)
6 cups Chicken broth
2 medium sized Potatoes (or more small ones) (cubed)
1 1/2 cups Shredded cabbage
1 teaspoon Dried thyme
1 1/2 teaspoons Dried parsley flakes
1/2 teaspoon Salt
1/2 teaspoon Pepper
2 cups Cooked shredded chicken

Step by Step Instructions
  1. Heat the oil over medium heat in a large saucepan, then add the carrots, celery and onion. Cook them for 5 to 7 minutes, then add the garlic and cook for 1 more minute.
  2. Stir in the chicken broth, potatoes, cabbage, thyme, salt and pepper. Bring the soup to a boil, then reduce the heat, cover the saucepan and let the soup come to a simmer.
  3. Let the soup simmer for 10 to 15 minutes, then stir in the shredded chicken. Once the chicken has warmed through, serve the soup garnished with parsley flakes.
