Beef Brisket Chili

Ingredients
2 pounds Beef brisket (cut into 1/2-inch pieces)
1 large Onion (finely chopped)
2 tablespoons Canola oil
32 ounces Kidney beans
1 pound Smoked sausage (like kielbasa or Polish sausage) (halved and sliced)
16 ounces Salsa
14-1/2 ounces Diced tomatoes
8 ounces Tomato sauce
8 ounces Green chiles (chopped)
2 cloves Garlic (minced)
1 tablespoon Chili powder
1 tablespoon Ground cumin
1 teaspoon Celery salt
1/4 teaspoon Salt
1/8 teaspoon Pepper
2 or 3 tablespoons Lemon juice
1 1/2 teaspoons Lemon zest
Optional toppings include:
Shredded cheddar cheese
Sliced green onions
Sliced peppers

Step by Step Instructions
  1. Working in batches, brown the brisket and onion in a Dutch oven in the oil. Drain the excess grease.
  2. Stir in the beans, sausage, salsa, tomatoes, tomato sauce, chiles, garlic, and seasonings.
  3. Bring the chili to a boil, then reduce the heat, cover, and let simmer for 3 hours. Stir in the lemon juice & zest
  4. Serve and top as desired.
