1 large Potato (or several small) (peeled and cut into 1/2-inch cubes)
1 large Onion (chopped)
1 3 inch Cinnamon stick
1 Bay leaf
3 whole Cloves
1 tablespoon Canola oil
1 pound Boneless skinless chicken breasts (cut into 1/2-inch cubes)
1 clove Garlic (minced)
1 teaspoon Curry powder
1/2 teaspoon Minced fresh gingerroot
2 medium sized Tomatoes (seeded and chopped)
1 teaspoon Salt
1/2 cup Sour cream
Hot cooked rice (for serving)
Step by Step Instructions
- Put the potato cubes into a small saucepan and add the water. Bring to a boil, reduce the heat, cover the saucepan, and cook for 10 to 15 minutes. Drain the water after.
- saute the onion, cinnamon, bay leaf and cloves in oil in a large skillet. Once the onion is tender add the chicken, garlic, curry and ginger. Cook for 1 minute, then add the tomatoes, salt and potatoes.
- Cover the skillet and let cook for 10 to 15 minutes. Remove the cinnamon, bay leaf, and cloves.
- Stir in the sour cream and serve with cooked rice.
