Creamed Curried Spinach

Ingredients
1 1/2 tablespoons Olive oil
1/4 teaspoon Crushed red pepper flakes
5 cloves Garlic (thinly sliced)
1/2 cup Shallots (thinly sliced)
3/4 teaspoon Curry powder
1 pound Spinach (original recipe suggests baby spinach)
1/2 cup Plain yogurt
1/4 teaspoon Salt

Step by Step Instructions
  1. Cook the garlic and red pepper flakes in the oil in a skillet over medium-high heat for 2 minutes. Add the shallots and curry powder and cook for 2 more minutes.
  2. Add the spinach in batches and cook stirring, letting the leaves wilt before adding more to the skillet.
  3. Stir in the yogurt and salt.
